Here’s a recipe for Restaurant-Style Chicken Fajita Rice, combining the bold flavors of chicken fajitas with the comforting goodness of rice. It’s perfect for a one-pan meal.

Ingredients:

  • For the Chicken Marinade:
  • 2 boneless, skinless chicken breasts (cut into strips)
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • Salt and pepper to taste
  • For the Fajita Rice:
  • 1 cup long-grain rice (like Basmati or Jasmine)
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Optional Toppings:
  • Fresh cilantro
  • Lime wedges
  • Sour cream
  • Shredded cheese (Cheddar or Monterey Jack)

Instructions:

  1. Marinate the Chicken:
  • In a bowl, mix the olive oil, lime juice, chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper. Add the chicken strips and toss to coat. Let it marinate for at least 30 minutes or up to 2 hours in the fridge.
  1. Cook the Chicken:
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken strips until browned and cooked through, about 5-7 minutes. Remove and set aside.
  1. Cook the Vegetables:
  • In the same skillet, add another tablespoon of olive oil. Sauté the onions and bell peppers until they soften and develop a bit of char, about 5 minutes. Add minced garlic and cook for another minute. Remove the vegetables and set aside with the chicken.
  1. Prepare the Rice:
  • In the same skillet, add 1 more tablespoon of olive oil. Stir in the rice and cook for 1-2 minutes until it’s lightly toasted. Add cumin, smoked paprika, chili powder, salt, and pepper.
  • Pour in the chicken broth, bring it to a boil, then reduce the heat to low. Cover the skillet and simmer for about 15-18 minutes or until the rice is cooked and the liquid is absorbed.
  1. Combine Everything:
  • Once the rice is done, fluff it with a fork. Stir in the cooked chicken and sautéed vegetables. Let everything heat through for 2-3 minutes.
  1. Serve:
  • Garnish with fresh cilantro, lime wedges, sour cream, and shredded cheese if desired.

Enjoy your flavorful and hearty chicken fajita rice!
